A preparation item moves directly to Sent to kitchen. A ready-to-serve item moves directly to Ready. Cancellation requires a reason, so exceptions never vanish into guesswork.

Kitchen moves preparation through Sent → Preparing → Ready and stops there. The floor sees Ready and owns the next action: Serve.
The running payable is the last state of the same Table 05 story.
Items, discounts, tax, service charge and additional charges stay legible. Cancelled and unavailable items never become billable, and the final bill freezes the rates that actually applied.
